Ricotta Cream


(for 4 portions)

17 oz. Buffalo ricotta
1 oz. raisins
1 oz. Sugar
1 tblsp Malvasia
1 oz. Wild Honey


Soak the raisins in warm water for at least half an hour, then drain and dry them.
Beat the ricotta with the sugar, Malvasia and honey. When the mixture is well blended, add the drained and dried raisins, reserving some for garnish.
To serve, garnish with the remaining raisins and a drizzle of honey.
