We promised you a year full of surprises, and here we are, celebrating our 20th Anniversary with a new special menu, this time dedicated to Puglia. After the success of the Figliata di Bufala and the Sapori Campani menu, we are excited to present Flavours from Puglia, the result of our collaboration with Salumificio Santoro, a renowned artisanal company in the Itria Valley.
Founded in 2000 by Giuseppe Santoro, a butcher from Cisternino - later joined by Piero Caramia, a butcher from Martina Franca, Santoro is now one of the most established producers of traditional cured meats, such as the iconic Capocollo di Martina Franca.
Available from Monday, September 9th until the end of October in our restaurants in Italy and London, the menu combines the genuine flavours of Obicà with the research and craftsmanship of Santoro's products to create five special dishes that pay homage to the Puglia tradition and our journey with this historic partner.

Our journey into the flavours of Puglia begins with the Degustazione di Salumi e Nodini Pugliesi, a selection of Santoro cold cuts: Capocollo di Martina Franca, with its strong and aromatic flavour, Spicy Stirrup Salami, which adds a touch of liveliness, Santorella Artisanal Mortadella, delicate and enveloping, and Cured Pork Fillet with Lard, rich and soft on the palate.
All served with fresh Mozzarella Fiordilatte knots, Datterini Tomatoes, Baby Spinach and our fragrant Focaccina Origano.
Santorella Artisanal Mortadella is the star of our Potato Croquettes, a dish that combines crispiness and softness: the golden and tasty croquettes hide a heart of Santorella, which harmoniously blends with the Ricotta di Bufala, creating a contrast of flavours and textures enhanced by the delicate Bell Pepper Ketchup.
We find the other Santoro specialities in three proposals straight from the Obicà oven.
The first is Pizza Capocollo, where the Mozzarella Fiordilatte di Agerola base welcomes the intense flavour of Capocollo di Martina Franca, balanced by the creaminess of Stracciatella cream and the sweetness of Figs. Celebrating tradition with a touch of originality in pure Obicà style.
Moving on to the Pizza Salame, a symphony of flavours combining high quality ingredients: Mozzarella Fiordilatte di Agerola, Organic Tomato, Spicy Stirrup Salami for a strong note, Roasted Artichokes in Olive Oil, Buffalo Ricotta and Grana Padano DOP Chips.
The last stop on our journey through Puglia is the Focaccina Filetto Lardellato, with a selection of high quality products: Sautéed Yellow and Red Datterini Tomatoes, Cured Pork Fillet with Lard, Sun-dried Tomatoes in Olive Oil, Mozzarella di Bufala Campana DOP and Fresh Basil.
